S1: E7 (Bonus Episode) BBQ Brief #2 - Boopa's Blackberry Bourbon Cobbler has now Dropped on Spotify and Here's the Recipe!

Our third Bonus Episode at The B Spot Podcast has now dropped on Spotify, and we're so excited to share it with you!





As you know, along with baseball, the other two B's of The B Spot Podcast are BBQ and Bourbon. And since it's a long time between our full-length episodes (which drop on Fridays), we thought it would be fun to talk BBQ or Bourbon on each Wednesday (as Bonus Episodes). So, here we go with our second BBQ Brief - Boopa's Blackberry Bourbon Cobbler!


Here's a fabulous little teaser to get your mouth watering for this sweet and yummy dessert (and yes, you can make both sweet and savory dishes on a smoker!)...






And as promised on Spotify inside this episode, here's my recipe for Blackberry Bourbon Cobbler...


You'll need the following items:


  • 24 oz frozen or fresh blackberries

  • 1 lemon (zest & juice)

  • 2 tablespoons of bourbon

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 1/4 cup white sugar

For the streusel:

  • 1 cup flour

  • 1/2 teaspoon baking powder

  • 1/2 cup butter, softened (plus extra to grease pan)

  • 3/4 cup brown sugar

  • 1/2 teaspoon cinnamon

  • pinch of salt


Instructions:

  1. Preheat your smoker to 375 degrees.

  2. In a large bowl, combine berries, lemon zest, lemon juice, bourbon, cinnamon, nutmeg, and sugar. Mix to combine.

  3. To make the streusel, cream the butter and brown sugar with a hand or stand mixer. Make sure it's well-combined and fluffy. Add flour, salt, and cinnamon and mix again, until just combined. Mixture should be crumbly.

  4. Use remaining butter to grease a 10-12" skillet or baking dish. Pour the blackberry mixture into the pan, then scatter the streusel on top.

  5. Place the dish into the smoker, and bake (with bonus smoke!) for 40-45 minutes until the fruit is bubbling and the streusel has browned slightly.


Note: You can also make this in a pellet grill.
